Funfetti Cookies!!




Take about an hour to make. From start to finish. More so if you are slow in the kitchen like me. ;) makes about 3 dozen. What you need: 1 box (18.90z.) Pillsbury Funfetti Cake mix. 1/3 cup vegetable oil 2 eggs 1/2 container (15.60z.) Funfetti Frosting. Optional: Addition of your own candy chips, I used Nana's buttermint rainbow chips. Steps: 1. Preheat over to 375. In large bowl, mix cake mix, oil, and the eggs with a spoon until moistened. Shape dough into 1 inch balls. Place 2 inches apart on ungreased cookie sheet. (Since the dough is so sticky, you may want to bake these cookies with a friend, it took my Dad & I to get the dough onto the cookie sheet properly.)Using a glass cup, (lightly dust cookie dough balls with flour so that the dough does not stick to the glass) flatten each dough ball to desired thickness. (About 1/4 of an inch) 2. Bake 7-9 minutes, or until edges are golden brown. Be sure to check on the cookies often, it is difficult to see when the edges have browned or not. Also, they firm up after baking so shoot for a more underdone cookie. Cool 1 minute, remove from cookie sheet, & onto a cooling rack. (I simply used a sheet of wax paper, worked great!) 3. Spread frosting over warm cookies, immediately followed by sprinkles of desired choice. Let frosting set before storing in a tightly covered container. (Cool cookies in fridge before stacking into a container, the frosting is to sticky & runny, therefore getting all over the other cookies, which is no good!)
